Precision, elegance, and extreme seasonality lie at the heart of SingleThread, a Sonoma County restaurant, inn, and farm that set a new bar for fine dining when it opened in downtown Healdsburg in 2016.
A collaboration between Chef Kyle Connaughton and his farmer wife, Katina, the restaurant serves a tasting menu fully customized to each guest’s dietary preferences. Its dizzying array of dishes showcase ingredients hailing from SingleThread’s own five-acre farm and the surrounding region, as well as Kyle’s expertise in clay pot cooking. His black cod fukkura-san, featuring the buttery fish and twelve to fourteen vegetables from the farm, perfectly encapsulates both.
Though the experience is impossibly refined, the service is warm, making each meal at SingleThread feel like as much a celebration of hospitality as place.
