Pure Pizza has forty seats in its dining room, but no televisions – and not a single trash can. Customers are asked to scrape food into a compost collector, and toss unwanted packaging into a recycling bin. “Food waste is one of the largest culprits in our landfills, so we are proud to say nothing from our restaurant occupies any space within any landfill“, owner Juli Ghazi says, adding, “all of our kitchen grease is turned into biodiesel fuel“
