Sean Lilly Wilson, owner of Fullsteam Tavern in Durham, North Carolina shares his recipe for the classic savoury snack, Southern pimento cheese.

Classic Pimento Cheese


  • 1/2 tsp ground black pepper
  • 1/4 tsp hot smoked paprika
  • 1/4 tsp ground cayenne pepper
  • 1/4 tsp salt
  • 1½ cups mayonnaise (preferably Duke’s)
  • 1 tbsp aji amarillo paste
  • 1/2 lbs extra-sharp white cheddar, shredded
  • 1/2 lbs extra-sharp yellow cheddar, shredded
  • 4 oz pimento, drained and finely chopped

Method: In a medium-sized bowl, mix black pepper, paprika, cayenne, salt, mayo and aji paste until combined. Fold in the cheeses with a rubber spatula to thoroughly combine.

Transfer to a container, cover, and refrigerate for a few hours before serving to allow the flavours to meld. Season to desired taste.

Use within one week.
